How to Cook Dum Aalu or Aloo Dum ? (a part of the traditional Kashamir Pandit cuisine)

Dum Aalu or Aloo Dum is a potato based dish. It is a part of the traditional Kashamir Pandit cuisine, from the Kashmir Valley in the Indian state of Jammu and Kashmir. The potatoes, the usually smaller ones, are first deep fried, then cooked slowly at low flame in a gravy with spices. Dum Aloo or Aalu Dum is a popular recipe cooked throughout south Asian countries.


Ingredients:

 1. 500 gram small size of potatoes
 2. 4 small tomatoes chopped
3. 1 onion cut into any size.
4. ½ tbsp gram of masala
5. 1 tbsp Kashmiri of red chili powder
 6. 4-5 cloves garlic and the same amount of ginger
7. 2 spicy green chilies
8. ½ tbsp turmeric powder
 9. ½ tbsp coriander seeds and ½ tbsp. cumin seeds
 10. Add salt to test
11. 3 tbsp oil to fry
Some coriander chopped to garnish and for the best flavor.


How to Cook!
we use small potatoes to make, dump potato this is why I used small potato 4 tomatoes cut in small pieces’ big spoon, Kashmiri red chili powder coriander onion half spoon gram masala oil salt cumin and coriander seeds. both half spoon half spoon turmeric green chili, garlic and ginger make holes in potatoes with the help of fork by doing this, all the spices go deep inside and makes it tastier do it one by one all potatoes are done Now, we will fry it. heat the pan add 3 spoon oil add turmeric at first red chili powder add potato as well and fry them heat must be high at this time, fry it for 8 minutes when all potatoes are coated well with the spices add salt fry them till they are a bit crispy from outside. I fried them for 8 minutes outside of the potatoes are crispy take it out in a bowl take all of them out fry ginger and garlic in same oil green chilly add onion and stir well when they are a bit brown add tomatoes you should cook it very well when cooked well tomatoes turn into paste we will make puree from these ingredients add them in the mixture make puree, when cooled down a bit. Cool it down a bit at first our puree is ready I am opening it.  it is ready heat the panna adds half spoon oil fry cumin and coriander in that oil when they are fried add puree mix well add chili powder gram masala add salt and mix well after stirring well add potatoes add water I used little amount of water because I like thick gravy you can increase or decrease the amount of water as your wish cook it for 3 minutes after 3 minutes our dump potato is ready add coriander serve it as you like it you can serve it with rice, beaten rice or chapatti. it is yummy make this at home and enjoy this recipe with your friends and family.
